65g Dodoni Feta Cheese, crumbled 4 medium zucchini, ends trimmed & sliced into paper-thin slices 3 Tbsp. fresh mint leaves
1 bunch arugula 1 Tbsp. dried cranberries 1 Tbsp. Gourmet Go nuts pine nuts or walnuts, roasted
1 Tbsp. dried mint 4 Tbsp. olive oil 3 Tbsp. balsamic vinegar
3 Tabsp. grapefruit juice.

Method: 

  1. In a medium size bowl mix zucchini slices, nuts, mint, cranberries and arugula
  2. For dressing mix olive oil, balsamic vinegar & grapefruit
  3. Add dressing 15 minutes before serving
  4. Sprinkle with cheese & nuts
