Method:
- Combine guacamole and lemon zest in a bowl and set aside
- Cut cucumber into quarters lengthways then into halves
- Lay each smoked salmon strips in a single layer on a work surface
- Spread guacamole on each strip leaving around 2cm empty at one end.
- Lay a cucumber stick and some arugula leaves about 1cm from the guacamole-spread end, and roll up tightly
- Placed salmon rolls on plate with some arugula leaves
- Season with ground black pepper and serve.
