Salmon-Cucumber Rolls with Guacamole

1 Pack Smoked Salmon 

6 Cucumbers

2 Handfuls arugula

1 Tub Gourmet Spicy Guacamole

Zest of 1 small lemon 

Freshly ground black pepper

Method:
  1. Combine guacamole and lemon zest in a bowl and set aside
  2. Cut cucumber into quarters lengthways then into halves
  3. Lay each smoked salmon strips in a single layer on a work surface
  4. Spread guacamole on each strip leaving around 2cm empty at one end. 
  5. Lay a cucumber stick and some arugula leaves about 1cm from the guacamole-spread end, and roll up tightly
  6. Placed salmon rolls on plate with some arugula leaves 
  7. Season with ground black pepper and serve.
