Prawns on Coleslaw

1 pack Poseidon prawns tail on, defrosted 

2 garlic cloves, minced

1 tsp chili powder

1 tub Gourmet coleslaw

1 thumb ginger, minced

1 pinch Maldon sea salt 

6 tbsp extra virgin olive oil 

Zest and juice of 2 lemons

  1. Combine prawns, garlic, lemon zest, ginger, chili powder and 3 tbsp olive oil in a bowl 
  2. Marinate for 1 hour inside the fridge
  3. Heat a frying pan with half of the remaining olive oil 
  4. Lay the prawns into the pan, cook half way, flip on the other side and continue cooking. 
  5. Season with Maldon sea salt and drizzle with lemon juice
  6. Remove from pan and place onto coleslaw
  7. Garnish with coriander leaves and serve with lemon wedges
