1 Gourmet country loaf, sliced

4 fresh tomatoes

Handful of fresh basil

2 packs Mozzarella di Buffala, shredded

Extra virgin olive oil

Maldon sea salt

Freshly ground black pepper

  1. Preheat oven to 200C. Line a baking sheet with parchment paper. Place the bread slices on the baking sheet. Using a pastry brush, lightly coat the bread slices with olive oil. Sprinkle with salt & pepper. Bake until lightly toasted, about 5-6 min.
  2. Divide the tomatoes in quarters. remove seeds & dice into small pieces. In a bowl mix with olive oil. salt , pepper & thinly cut basil leaves
  3. Place 1 tbsp of the tomato mix on each bread slice. Add the shredded mozzarella on top. Add a drizzle of olive oil & garnish with fresh basil leaves.
