This labelled hard-pressed cheese is made from farm fresh raw milk. You can easily recognize it on a cheese board by its concave heel, solid and smooth texture, and pale yellow to ivory colour. Beaufort has a divine taste and cuts a fine figure. Rubbed and turned for at least five months, its maturing helps it develop unique floral and fruity aromas. It makes a great table cheese but is also amazing as grilled cheese and can be included in cheese fondue.
