White Endive, Makar

With a full bodied flavour and an unforgettable crunch, we love our endive. The slightly bitter flavour is similar to radicchio, but its texture is unique to the endive. Add in a salad with cherry tomatoes and crumbled blue cheese. Sometimes, Endive has a bitter core, which can easily be cut out. Yet it is precisely this mildly bitter taste which makes Endive so popular. To clean: Remove wilted leaves. Wash briefly in cold water. Do not leave Endive in water, or it will turn brown.
