500g Asparagus, trimmed & halved 5 cups cherry tomatoes, halved Handful of fresh basil leaves
1/2 cup pinenuts, toasted 1 avocado, cut in cubes

Dressing

1/4 cup olive oil 2 tsp dijon mustard Maldon sea salt Fresh cracked pepper

Method:-

  1. Cook asparagus in boiling water for 2 min. Drain & rinse with cold water.
  2. In a large salad bowl, toss all your ingredients together & add the asparagus.
  3. In jar, shake all your ingredients together. Pour over the salad & toss to coat evenly.
