A little about the origin:
Taleggio is an Italian cheese produced in the province of Bergamo, Brescia, Como, Cremona, Mailand, Pavia, Treviso and Novara. It is a flat, square cheese weighing around 2kgs. The rind is thin and reddish, and the soft curd is white to straw yellow. Taleggio is one of the oldest cheeses in Lombardy where it has been known since the 9th century.

In The Kitchen:
Taleggio served with fruits and walnuts is the ideal finishing to an Italian meal. As a snack with tomatoes, with rocket salad and perfect for a cheese platter. Due to its melting characteristics, Tallegio is especially delicious in risottos, polenta and as a pizza topping.
Storage: Should be stored in the fridge, alone or with cheeses of similar type, wrapped in grease-proof paper and placed in an airtight container.
