A little about the origin:
Parmigiano Reggiano is a world famous cheese and also falls under the name Parmesan. The Cheese is produced exclusively in the provinces of Bologna, Modena, Parma, Reggio Emilia and Montova in Italy.
The full wheel of Parmigiano Reggiano is cylindrical in shape with a diameter of 40-45 centimetres and height of around 18-24 centimetres. It weighs at least 38 kg! This straw coloured cheese has a mildly grainy consistency and is crumbly to cut.

In The Kitchen:
Parmigiano Reggiano is mostly grated or shaved and added to pasta dishes, soups, salads, sandwiches , risotto and it is a classical addition to beef Carpaccio.
In Italy, small pieces of this cheese are served as canapés and drizzled with aged balsamic vinegar.

Storage: Parmigiano Reggiano is best stored whole, and grated/shaved when need to preserve the strong aroma and to ensure a longer shelf life. Wrapped in grease-proof paper and aluminium foil, it can be stored for 1-2 months and even longer.
