A little about the origin:
Fontina comes from the Aosta valley in northwest Italy near the Swiss and French Alps. It is a flat, round cheese that weighs between 8 to 18 kilos. Its firm rind is only 2 mm thick, and its curd is soft and elastic with very small holes.

In The Kitchen:
Use: In Italy Fontina is eaten with fresh bread and as it melts easily, it is delicious when added to burgers, to fondues, in potato bakes and in a simple toasted sandwich.
Storage: Should be stored in the fridge, alone or with cheeses of similar type, wrapped in grease-proof paper and placed in an airtight container.
