A little about the origin:
Caciocavallo is produced throughout southern Italy. Caciocavallo has a rounded shape that weighs from 1 to 2.5 kilos. It rind is yellow or light brown, thin and very smooth. The cheese is intensely yellow on the outside, and lighter on the inside, and it is compact with very tiny holes.

In The Kitchen:
Use: Caciocavallo is eaten as antipasti with fresh crusty bread and good extra virgin olive oil. Best served on cheese platters with crackers.
Storage: Should be stored in the fridge, alone or with cheeses of similar type, wrapped in grease-proof paper and placed in an airtight container.
