Italian Taleggio Cheese
Taleggio is cheese of ancient origins dating back to the 10th century and protected by EU as Denomination of Origin in Italy. It is quadrangular and weighs 1.7-2.2kg. It has a thin rind with characteristic grey and light sage colored mould. The paste changes from white to pale yellow. The taste is sweet with ligh acidulous vein slightly aromatic and sometimes with truffle aftertaste.
